- Butter at 82 percent fat or higher. Standard supermarket butter holds more water, and water turns to steam and tears the layers.
- If butter starts breaking through the dough, stop and chill for twenty minutes. Carry on regardless and the layers merge into brioche.
- Prove until they wobble when the tray is shaken. Under proved croissants leak butter and come out dense.
Variations
- Chocolate batons rolled in for pain au chocolat, using this exact dough.
- Custard and soaked raisins for pain au raisin, rolled as a spiral instead of a crescent.
- A day two shortcut using bought all butter puff pastry, which is not the same but is edible.
