- Medium heat and a full eight minutes. A panini browned in three is cold cheese in hot bread.

- Sun dried tomatoes instead of fresh, which removes the water problem entirely.
- Green pesto rather than red, which is the more traditional pairing.
- A layer of rocket added after pressing, so it stays fresh rather than wilting.
