That cold steep is the whole reason it tastes the way it does. Most of the bitter compounds in coffee need heat to dissolve, so leaving heat out produces a cup that is naturally sweeter, rounder and much lower in acidity than iced filter coffee. What comes through is chocolate and a faint citrus, with almost no sharpness at the finish. It is smooth enough that people who take sugar in everything else tend to drink this black.
