Frappuccino Roast is the part most people get wrong about this drink. It is not espresso: it is a concentrated coffee base built to hold its flavour against ice and dairy without going bitter, and it dissolves cold. - A pinch of xanthan gum, about a quarter teaspoon, is what stops a home Frappuccino separating. It is the same thing the shop base uses.
- Double strength coffee. Normal strength disappears entirely once the milk and ice are in.
- Blend for less time than feels right. Over blending melts the ice with friction and the drink goes thin.
